Michael Chiltern starts his day by pouring a glass of one of his own handcrafted beers. It's one of the main draws at his brewery, Wolf and Warrior Brewing Co., named specially after two important people in his life.
"The Wolf and Warrior gets its name from my two sons," he said. "Their names are Vuk and Branko…Vuk means Wolf in Serbian and Branko means defender or warrior. So, Wolf and Warrior. My boys. My pride and joy."
Before Chiltern was a father, he was a television producer. After 20 years in the business, however, he sought a new passion to follow. That's where brewing came into play.
"It's a passion of mine to create. So, being in television, I was creating imagery," he said. "[We're] telling stories, and every beer tells a story. It tells a story of what the brewer intended; what they wanted you to feel in that moment... I first got into brewing after having a friend's home brew at a Super Bowl party, and I said, 'Dude, I can't believe that you made this beer and it tastes so good.' So, I wanted to try it...I brewed the beer. It was ready right before my first child's baby shower...and everybody loved it and drank it all. So, I had to make another batch. From there then on, I was hooked with the different combinations of hops and malt that you can use to achieve to [make] different flavors of beer."
Chiltern enjoyed his new hobby so much that he started sharing it with members of the public.
"For many years, I entered home brew competitions," he explained. "I won 12 out of 14 medals that I could possibly win entering my beers in home brew competitions."
From his old garage in Brooklyn, Chiltern packed up his bags and moved to White Plains, where he eventually started a business plan. By 2019, he opened Wolf and Warrior Brewing Co., making all of his creations right in-house. Six years later, people are still buzzing about his brews.
"I have a tremendous sense of pride, as nothing makes me happier than hearing people lov[e] what I'm doing and creating," Chiltern said. "When it's a finished beer in your glass and you're drinking it, and if you take a sip and have that 'Mmm' [and] smile reaction, I did my job well."
Wolf and Warrior Brewing Co. is located at 195 E Post Road in White Plains. Customers can also buy Chiltern's beers at local grocery stores like DeCicco & Sons, Wegmans and Whole Foods Markets.
