Ingredients
3 thin flank steaks
¾ cup pecorino
3 tbs garlic (chopped)
¾ cup parsley (chopped)
3 tbs olive oil
6 skewers
Instructions
Place the steak on a flat surface. Using a meat mallet pound the meat to tenderize and flatten it out and set aside.
Drizzle each steak with oil, sprinkle with cheese and top with parsley.
Roll up the meat tightly and set aside.
On a flat surface place all three rolls of meat making sure that they are set side by side.
Using skewers, skewer through all three rolls of meat making sure that each skewer is one inch apart.
Using a knife cut the meat between each skewer.
Place each skewer on the grill and cook until desired doneness.
